
As a catering company based in South Wales, we thought it fitting to introduce our Welsh rarebit recipe to you on St David's Day. Our head chef Oliver has adapted the recipe recently to use local Welsh ingredients, including the delicious Cwtch red beer from Tiny Rebel Brewery in Rogerstone. We may or may not go there quite often, it's definitely worth a visit!

Ingredients
50g plain flour
50g butter
250ml Cwtch red beer
250g Welsh black bomber cheese
2 tsp English mustard
2 tbsp Worcestershire sauce
Black pepper (to taste)
Method
In a small saucepan melt the butter and add the flour to make a roux sauce. Cook for a couple of minutes, stiring continuously to prevent the roux from burning.
Stir in the Cwtch beer, a little at a time, until you have a thick and smooth sauce. Add the grated Black Bomber cheese and stir until melted.
Mix in the mustard & Worcestershire sauce, season with black pepper. You're done!

Hints & tips
We recommend spreading this mix on lightly buttered sourdough toast and then sticking it under the grill for a few minutes.
Alternatively, you could fill little short crust pastry cups with the mix and grill, sprinkle them with crispy leeks and serve them up as vegetarian canapés at your next dinner event?
